ქართველი is a Georgian person; ქართული is a Georgian thing or the Georgian language.
How It Works
| Place | Person | Thing, language |
|---|---|---|
| საქართველო (Georgia) | ქართველი | ქართული |
| ინგლისი (England) | ინგლისელი | ინგლისური |

So a Georgian friend is ქართველი მეგობარი, but Georgian food is ქართული საჭმელი.
For the language, use ქართული as a noun: ქართულს ვსწავლობ (I'm learning Georgian). To say in Georgian, add -ად: ქართულად.
The plural for people works as usual: ქართველები (Georgians).
Many countries have the same pair of words. Learn the place, the person and the thing together, since the endings vary a little from word to word.
Words such as ქართული go before the noun and keep one form, like other adjectives: ქართული სიმღერები (Georgian songs).
