Kansai Japanese, or Kansai-ben, is the Japanese of western Japan around Osaka, Kyoto, and Kobe, and Osaka-ben, the speech of Osaka, is the version people outside Kansai think of first. The Kansai region has about 22 million people. In Kansai-ben, people say おおきに for thank you and あかん for no good, and negative verbs end in へん, so 行かない becomes 行かへん. The pitch accent also differs from Tokyo's, so people across Japan can often tell where a Kansai speaker is from.

Books, Websites, and Videos for Kansai-ben
Colloquial Kansai Japanese from Tuttle explains Kansai grammar, includes a Kansai-ben dictionary, and gives hundreds of phrases, sentences, and conversations, from shopping to talking with your boss, with audio. Kansai Japanese by Peter Tse is a phrasebook of hundreds of sample sentences and dialogues with English and standard Japanese, including Kyoto speech, men's and women's speech, and Kansai honorifics.
The Kansai-ben self-study site began in 2006 and is free to read. It has grammar notes and short video clips with listening and speaking exercises, videos of people talking in Kansai shops and interviews with local people, a glossary, and a list of Kansai-ben anime, films, and songs. For quick look-ups, JapanDict has a list of Kansai-ben words, and the Colloquial Kansai Dictionary website lets you search a Kansai-ben word to see its standard Japanese equivalent.
